    Ingredients

    • 3/4 cup butter
    • 3/4 cup brown sugar
    • 3/4 cup granulated sugar
    • 3 eggs
    • 1 teaspoon salt
    • 1 teaspoon vanilla
    • 1/2 teaspoon baking soda
    • 1 ounce Hawaiian coffee liqueur (or any coffee liqueur)
    • 2 ounces softened chocolate (semi-sweet)
    • 3/4 cup milk
    • 3 1/2 cups flour
    • 3 teaspoons baking powder
    • 1/2 cup shredded coconut

    Instructions

    1. Preheat oven 350 degrees F.
       
    2. Cream together butter and sugars.
       
    3. Beat in eggs.
       
    4. Add salt, vanilla, soda, liquer, and chocolate.
       
    5. Add in milk and then flour, beating alternately. Beat for 3 minutes.
       
    6. Add baking powder. Beat 30 seconds.
       
    7. Add coconut.
       
    8. Bake at 350 degrees F for 45 minutes.  You can also bake 30 minutes for regular layer cake. Makes a 9x13 cake.

    Icing

    • 3 tablespoons butter (softened)
       
    • 2 cups powdered sugar (add more if too soft)
       
    • 1 ounce rum or coffee liqueur
       
    • 1-1/2 ounces heavy cream
       
    1. Blend and beat for 3 minutes.
       
    2. Spread icing onto cake.
